Potsticker Salad

This is a super easy and quick way to have a filling salad with a minimal amount of work. Frozen dumplings are great to have around. As a snack, throw into a soup broth, or in a stir fry. This is a fun salad to take to work too. Just dress it before you eat. You can make your own potstickers or use any premade kind that you like. Vegetarian, chicken or shrimp are all good choices. Ponzu sauce is a citrusy soy-based dipping sauce that can be found in well-stocked grocery stores or Asian markets.

Potsticker Salad

INGREDIENTS

  • 20 pot stickers
  • 1 lb mixed Asian greens (mizuna, baby spinach, baby bok choi, shredded napa cabbage etc.)
  • ½ cup radish sprouts
  • 3 green onions, thinly sliced
  • 1 large carrot, shredded or cut onto matchsticks
  • ½ cucumber, peeled and thinly sliced
  • 1 tbsp sesame seeds

SALAD DRESSING

  • ½ cup ponzu sauce
  • 1 tbsp sesame oil

INSTRUCTIONS

  1. Prepare potstickers as according to instructions. When they are done sprinkle with sesame seeds.
  2. Lay down a bed of all the veggies onto 4 plates. Top each with 4-5 pot stickers and pour the ponzu dressing over the salad right before serving.
